Per la cugina in Canada:
ARANCINE DI RISO ( for 10 pieces)
g. 500 Ribe or superfino Arborio rice (a type of rice with big grain)
2 stock cube
1,2 lt. of water
250 g. of minced meat
100 g. boiled peases
1 tablespoon of double tomato purée
2 tablespoon of béchamel (white sauce)
250 g. of mozzarella
80 g. of fresh caciocavallo (a fresh stringy cheese)
120 g. of cooked ham in little cubes
2 small bag of saffron
1 egg
50 g. of grated Parmigiano
(Parmesan cheese)
Boil the rice in 1,2 l. of water with the stock cubes e let cook until the water is ended. Than, when all is tepid add saffron, egg and parmesan.
For the meet stuffed: prepare a thick meat sauce with a fry lightly onion, minced meat, tomato purée, peases, nutmeg, pepper, salt. Add 2 tablespoon of béschamel (white sauce). When all is tepid, add ham sliced into little cubes, cheese and cubes of mozzarella.(see Line's video)
There ia also a white version called “arancina al burro” that we can translate as “tarancina o the butter” .
This is filled with a thick white sauce prepared with 50 g. of butter, 50 g. of flour e 1\2 l. of milk, pepper, salt and nutmeg.When all is tepid add cubes of cooked ham and mozzarella in cubes.
Select a piece of 135 grams of cooked rice e proceed as in the video. When the ball is ready, put it into a bowl with a batter of water and flour (add a littlebit of salt) and then put the ball into the breadcrumbs. Fry in a potful in deep oil.
